    Ohmygod, thisssssssss.
You will not regret this decision.

Valkyria Chronicles for the PS3 is also one of the most <3 games ever.
Final Fantasy Tactics for the PS1. The remake (War of the Lions) for PSP is supposed to be even better, but I haven't played it so can't say much.
Chrono Trigger and Chrono Cross, whoever suggested those, listen to them.

Skies of Arcadia: Legends (Gamecube, I think) is also extremely good.
Legend of Zelda: Windwaker, if no one suggested it already. In fact, every LoZ game that you can get for any system, get it. But Windwaker should be the priority.

Tales of Symphonia (if you haven't played it already).
Baiten Kaitos. You might want to play the prequel (Baiten Kaitos: Origins) first or second, depending on your preference of order, but I've only played the first.

    Well lemme see...

    PS1

Legend of Legaia - Can't believe no-one mentioned this one, it's a very rare gameto find but it'd graphics are good considering PS1's era.
Digmon World - Yup basically what anyone else said
Grandia - A must have, a fantastic storyline and cast of characters, it does span two discs but you'll enjoy it.
Lunar: Silver Story - Now I haven't played this game but it is a promising RPG.
Breath of Fire III/IV - Classic games, there are I and II on GBA
Final Fantasy IV-IX - What got me started on RPGs

    PS2
Legaia 2: Duel Saga - Sadly, this is not a true sequel to the 1st game but still has the same fighting commands but with a new array of characters.
Shadow Hearts Series - Awesome is all i'll say, You are a main hero who can beat demons and fuse with their souls to become a monster, funny bits do come in here in there.
Xenosaga - I never played Episode 1 since I never found it so I gotten Episode II with a DVD containing all the story of EP: 1, it takes like 3-4 hours to watch it all but the Xenosaga series is huge and vast. took like a week to get it done.
Breath of Fire V - A very restricting game, you do transform into a Dragon (HURRAH!) but only 1 and you have D-Gauge, this has a percent limiter in which you have to take Nina to the top of the Underground city you live in but the counter increases bit by bit and if you transform, you increase it by alot so you must reserve it until late in the game where final boss time, you can go nuts.

    PS3
Uncharted Series - a treasure hunter who looks for treasure really.
    Devil May Cry 4

See my suggestions for others. They are all must-plays, in the order that I gave them.

No. Just no. It's not that great of a game. Anyway

I actually kind of like FFXII. Though i mainly like it more for the sidequests. If you're a Sonic fan I would suggest Sonic Adventure 2 Battle. It's...kind of an RPG....well...maybe not exactly, but it's still a fun game. If you're a Sonic fan. Great two player gameplay as well.

Lost Odyssey is the best rpg i've played on the xbox hands down.

I'm gonna assume you're into turn based battles since you're asking for rpgs and lost odyssey sticks to the formula for the most part, little bits added in make it better. There's no grinding necessary either, so that's a plus. Story is goddamn brilliant, some of the memories almost had me crying. Music blew me away, and the graphics are consistently good. GET IT

You should definitely check out the Fable series, the first game is for PC, but Fable II and III are for Xbox 360
    Fallout 3 and New Vegas
Mass Effect and Mass Effect 2
Elder scrolls are pretty good games as well.
All of these are for Xbox 360 though some are cross platform (PS3) as well.
