I was thinking I was going to assemble a collective of short stories, some that I've already written, some that you guys have seen and I'd write a few that would only be in the book

Funny, I've also started writing my own book. It's more one of those inspirational novels, one which is partially based on my own life (the main character has the same heart condition as I do). It's less of an idea now and more of about three pages of basic introduction. Can't wait until it's done. :P

No, that's not an insult. Every writer needs an editor. Just trust me.

You could try e-book format first. and then see where that takes you, and if you're ready for the next step which is physical copies.

Of course there are other strategies to get your work out there. But if you make an e-book you hold the possibility of creating a small fan base and a name for yourself. I know, it would be kinda hard, but making something successful never is.
