In Windwaker hes a normal human kid. In other games hes a hylian though. Only tingle thinks Link is a fairy...

Me and my sis were talking it over while playing Ocarina of Time on the Wii (yes it's out there) and we just found out he was a Hylian. Then we were like well at least he's not a man fairy

 

Link was allways Hylian. Every version has blood roots in Hyrule. As for WW link being human, well take a look at this.



Take a look at the ears. See how pointy they are? Humans aren't that pointy.

As for what Hylians are, I've long suspected that they are a race of half-elfs, their pure blood ancestors long extinct.
