Demyx's hair and his style of twirling the sitar (though it would regularly be a guitar) is a tribute thing to the 80s rockers in a way. The mullet was a big hair-do at the time.

As for Saix, which the post was about, the pointy ears seems to me to be a thing to show his feral nature as a sort of werewolf type being, since his powers also were in tune with the moon, and he has a berserker rage. Others have pointed that out prior and I agree that is most likely the reason for it.
