My favorites would have to be... As I Lay Dying, Cradle of Filth, Dimmu Borgir, Demon Hunter, Underoath, and Devil Wears Prada.
lol true. I'm not into metalcore really. Mostly deathcore, grindcore, traditional death metal and SOME post-hardcore lol All very good choices. I would have to say that As I Lay Dying is one of the best live bands I've ever seen lol

Well, metalcore is in fact, a form of metal, even if it does have more in common with hardcore punk. The problem most metalheads have with it is because most of it sucks. Its the popular form of metal at the moment and, as such, tends to have a lot of throw-away bands that were only signed so the record companies could cash in on the genre's popularity. Also, I have to point out for Kamelot (amazing band, I might add), European styled power metal (even though Kamelot is an American band, they definitely play the European form of power metal) in general tends to be melodic, so its a bit redundant to say "melodic power metal." Sure its not objectively false and, admittedly, it is a nice way to point out the differences between European styled power metal and the more thrash and NWOBHM influenced American styled power metal (Iced Earth is a good example here). Furthermore, by technicality, Kamelot should properly be considered progressive power metal, but, honestly, that's nitpicking and even I'm not that picky. EDIT: You know, I would consider Scar Symmetry more prog-death than straight melodeath. When I think melodeath, I usually think stuff like In Flames and Amon Amarth, not stuff like Scar Symmetry and Opeth. EDIT2: Also, it really would have been nice to know about those list tags sooner....
Having listened to them extensively (as well as In Flames and Opeth, for what it's worth), I'd have to disagree. Their style isn't as much straight-up prog as it is mildly experimental; if you want some really solid examples of their melodic quality, Pitch Black Progress is what you want to look at, specifically things like "Carved in Stone" and "The Kaleidoscopic God." I can see what you mean though, and they did sort of move away from that strictly melodic feel after Pitch Black. Of course, they're Swedish, so naturally it can be hard to pin down their genre when they can't even pin down their band members. Oh yeah, and to keep this on-topic, I forgot one of my all-time favorites. Tool. <3 <3 <3 <3 <3 love them so muuuuch
Having listened to Pitch Black Progress a bit more in depth after reading this, you definitely have a point. Still, its not as straight forward as, again, something like Amon Amarth. Really, I'd say Scar Symmetry is somewhere between straight melodeath like Amon Amarth and straight prog-death like Opeth.
Usually I'm not into metal or anything like that, but I LOVE Within Temptation. I find their sound to be very beautiful and I think she has the voice of an angel.
