Name boss battles that either stand out in your mind, or you often feel compelled to start the game over just to play the boss again, or just plain love fighting the thing.
Final Boss Wesker in RE5: Despite my low opinion of the game overall, the final boss in this mediocre game is.. Amazingly epic. Everything about it, the music, the arena, the way he looks... To me, its the most epic battle in any Resident Evil game. The amazing score really gives this battle a ton of points for awesomness.
Enigmatic Soldier in Kh2FM: My favorite Kingdom Hearts battle, period. The insane difficulty, the sheer intensity one feels when battling him (unless your Apulapul :P), the kickass battle music, all contribute to this awesome fight.
Great Mighty Poo from Conker: It speaks for itself as to why its one of my favorites.
Honorable mentions: Saix from KH2, Dr Nefarious from R&C3, Dr M from Sly 3, Emperor Tsao from Sly 3

    Gears of War 1: Beserker

    Sly Cooper 3: Lord Tsao

Those just came off the top of my head from across the years, lol^^^

The Zant battle at the end of Twilight Princess, hands down.

Unique as hell, man. I just wish it lasted longer.

Earthbound/Mother 2 - Giygas(By far the most disturbing video game villain in existence. No exceptions).
Metal Gear Solid 4 - Raging Raven
Metal gear Solid 3 - The End
    Kingdom Hearts - Malificent Dragon
Final Fantasy X - Lady Yunalesca
Zone of the Enders - Viola/Neith Final Battle
    Metal Slug(1) - 2nd Mission boss(Because I used to hate it :v)
Devil may cry - That huge blob thing towards the end of the game, I forget what it's called.

Thats all I can think of from the top of my head.

On a more serious note, I find the challenging battles are the ones who are the most memorable.
Like most MGS bosses are epic as hell.
Other games like Zone of the Enders 2 do great. (Still waiting for ZoE 3 Kojima -.-)
    Devil May Cry (Excluding DMC2...)
If anyone ever played Star Ocean: The Second Story, Decus and Vesper are annoying as ****. But it's an awesome battle.
ExDeath from FFV. Had trouble with him for some reason.
Kefka at the end of FFVI. Even if you were at a very high level, it was still challenging.

There are more...But I can't remember them right now.

Rofl I remember that. When he first appeared and his health bar went up, I was slowly saying ohhhhh shittttttt. And the one punch knocked him out. Hands down best boss battle ever.

These are the two greatest and most satisfying boss fights for this gen.

Probably the Lightening Temple battle in Tales of Symphonia...I fell asleep during it though, so obviously I lost. XD Also, the fire thing battle in Soul Callibur 2 with Kilik, if it counts. I've done it like seven times. Best. Battle. EVAR.

I have, and I agree. Till The End Of Time had an annoying duo-boss as well: Berial and Belzeber were quite troublesome...
