It'd probably be easier to find a site that specializes in this.

I know how to find the videos enclosed on the game disc though, and I think that the process is rather similar. First, you'll need an ISO of the game. You can download one illegally, but we won't discuss that here. If you own the game, pop it into your disc drive and use a program like DVD Decrypter to make the ISO -- just to warn you, the file can get pretty big. Then use a program called The File Splitter to split it into individual pieces (1GB each). Finally, using Nova Software Extractor (the website is in Polish or something but you can get the program in English), you can scan for (I believe) 3D Studio Max files.

That's all I've got. If you need more details I can give them. The programs aren't that hard, though.

Here are the programs I mentioned:

    http://www.dekabyte.com/filesplitter/

What your asking is actually quite advanced.
Extracting the maps from a game is usually quite simple.
But importing them into a 3D editing app is not.
In order to convert the games map format into a editable format (which games normally always use a custom format to store models and such) you must have a good understanding in 3D programming.

    What if I don't have 3DS max?

I'm using the Blender Wikibook and gaining a fair amount of experience. I know it might be several weeks, even months before I can apply these, but I'm just making sure I have them when I'm ready. I'm an aspiring animator, after all, and am just making a project rooted within Kingdom Hearts.

Blender isn't the program for this. Blender is an engine (and not a very good one) that used to be a modelling program. What you need is 3DS Max or Autodesk Maya for this, probably Maya since that has better animation if your going to be an animator. There's a few free versions like Maya's home learning edition but there are other ways which I can't really post xD
I've just learned how to use Maya for two years and I used Blender for a game once so if you do get Maya I might be able to help you figure some of this stuff out, I'll have to look into it.

I used to have a free version of maya, but I wasnt able to learn much about. I find the blender wikibook offers a much better learning curve, even if if's a steep one. I might look into maya.

For the Kingdom Heart PS2 games, yes.
It is complex because the game doesn't use 'standard' formats for its files.
The model/map are in a custom format that 3D editing apps do not support.
The texture is also in a custom format that image editing apps do not support.

You have to convert them into common formats then edit them.
But that is also no easy task.

Their is no straight answer for that.
    It's completely dependent on you.

But to learn enough to be able to do what I said in my previous post, its not something you can simply learn over-night or in a day.

My school has 3DS Max. Maybe I can take the files there. IDK.

How would one convert the texture files to Blender supported formats?

I understand! and no one can learn anything over night everything takes practice and that includes hacking so Ill keep practicing at hacking until I get better at it!:)

What's the file format the textures are currently in? Are you applying them to your own models or are you taking them from elsewhere?

Okay, it's an animation thing. You know how many scenes in the KH games have had less effort than others? well, Im trying to specifically do some touching up of those scenes in the animation(using the high-res models rather than the lower ones). To avoid legalities(and make it a challenge), Im making the models myself from scratch. sets and everything. starting with the simpler stuff, of course. I may post the shots/scenes on youtube, but no redistribution or profit is intended and Im not puting them in the games themselves.

I hope I'm not sounding rude, but you can't expect help from people for a project like this. As I said before, the texture is in a custom format called IMGD and you will need to write the converter for that format yourself. As that format has only ever been used in Square Enix PS2 games, and knowing how encrypted Square kept their mainstream PS2 games, I seriously doubt anyone has written a converter for their image format to a casual format. To be honest, if you have no programming knowledge you're better off making the textures for your models yourself. It would be a lot less trouble.
