Spiral Energy is different to a willingness to fight; Simon has always had a massive amount of Spiral Energy, and Kamina has always had next to none.
Kamina was actually not that great when he first piloted it, as evidenced by Viral saying so and totally owning him until he formed Gurren Lagann.
And in the main Sonic games, when was the last time Sonic used a vehicle? It's not about whether or not he could, it's more whether or not he would. Sonic's the kind of guy that fights for himself, to the point where he leapt off of the Tornado and flew the rest of the way himself in Sonic 3 & Knuckles.
