The first few episodes and up to the end of Volume 2 of the manga. Why?

Saber refers to a user of swords, but any bladed weapon is actually fine for it. Lancer refers to a Lance, but nobody uses lances, just spears. Archer, likewise, refers more to ranged fighting than the actual weapon. Of course, since Archer can actually use a bow, he's the one that qualifies best.
Which is really smart when you think about it, since the first thing you see in the anime is Shirou using a bow. The clever bit being that Archer is Shirou.
