Funnest boss for me was Xigbar. He was the first real challenge in the game for me, plus I loved how he hardly ever touched the floor and the fact that I unlocked final form for the first time while I was fighting him. Xaldin comes second, because one he gets down to his last health bar it's not too much fun trying to hit him while he's actually hittable :v
