Well, this is a little confusing. I think that they can bleed. If they can eat and breath (Organization 13 in this case) they need blood to do that. But if they have blood, they need a heart and they don't have one. Maybe they have a fake heart that make the normal body's functions, but not a heart to feel. I agree that the whole "heart" is more metaphorical that it being the actual organ.
