Considering KH1 and KH2, they were released and developed for the PS2. The PS2 might have been the most appropriate choice as they were first released in 2002-2006, when, as libregkd said, the PS2 was the most dominating console. Keep in mind the Xbox One and PS4 are new systems that have yet to be released. Users of the PS4 won't be able to play previously-released Kingdom Hearts games as well as far as I'm aware. And Square Enix is not unfamiliar to using different consoles for Kingdom Hearts; they develop for what's most appropriate for their game.
I don't think the decision to develop for both consoles was something they mulled over lightly. If a console was not capable I doubt they they would have included it in their list. Going by the single-platform-games-are-superior logic, it would be better to develop KH3 as a Xbox One-exclusive than developing it as a multi-platform game. But it seems that developing KH3 as a multi-platform game was in mind. According to this, they're not developing on any specific console system, but will cater to system porting later on. What I feel this thread is really about, is people don't like Xbox One, and don't feel it deserves the Kingdom Hearts series. Because someone decides to use a Xbox One and not a PS4 as their gaming console does not mean they have never played a Kingdom Hearts game. Fans of the series now have a choice of system they can play the game on as previously they did not. Graphics quality have never been a real concern to me, it's more of a look-and-feel thing that I've been appreciative of.
The argument for KH3 being a PS4-exclusive is pretty elitist. I felt pretty left out when Re:CoM and the Final Mix games were only released in Japan, and I'm glad to see them finally coming to the rest of the world. If quality is the only concern, why release any of their games internationally? If effort was only put in releasing their games in Japan, to only focus on a single version, no doubt they would either be a better game, or released faster. What makes Japan so privileged? What makes the PS4 so privileged? In a recent interview, Nomura stated he had intentions to eventually bring the Final Mixes everywhere, all over the world, so "everyone in the world can share in the Kingdom Hearts world." What better way to help do that then release a new game as a multi-platform? There are many Kingdom Hearts games I have not experienced simply because it's not on a console I own. I for one am glad because this is just another barrier gone so even more people can have a hand in. I think Square Enix would rather choose to delay a game than release something they were unhappy with, so I am not worried.

Well the possibility of the HD remix for Kingdom Hearts 2.5 coming out didn't really make me regret it. Even though I don't have a PlayStation 3... Also no longer have a PlayStation 2... A PlayStation Portable is what I have.

On the question of self, I can only speak for myself. I know what sex I am, but I don't feel that I belong to any gender. I don't have a sense of gender of myself. Gender for me has more to do with how others perceive me; I neither fight nor conform to being labeled as male and the expectations that come with it, and I don't correct people if they mistakenly think I'm female. I can't connect myself with a gender or genders; I'm simply me. My questioning of self goes deeper than this but I won't bother you guys with that. Like how others have said, I view gender as a social construct. I personally don't feel it, so whatever.
