FLCL is simply insanity and you will barely understand the fact that it has a coherent plot until the last episode. It's humour and vibrant theme is what makes it quite excellent.

Eureka Seven is an amazing anime that only I seem to have watched. It's a bit hard to explain, it's a sort of romance story at its base but it is combined with a few other genres to give it an excellent appeal. Also: giant surfing robots in the sky

Cowboy Bebop, oh god this is a must-see. The characters are quite well developed and the story is interesting indeed. Although I haven't finished the entire anime I loved it quite a bit, and from what I can remember it deals with the pasts of the characters. Also it has jazz music. The episodes are hard to find alone though.
