Well at high percentage of strength, U-D would be resistant even to being erased like that. She would brute-force her way into being in a moment that wasn't erased. If it were that easy to get rid of her she'd have never had to be sealed within a magic book.

The time eater can pull things from one time to another, or travel through time itself, but it can't move one person from one time to an event that's already passed.

That's not what it's about. It's more... well, if you don't mind the spoiler, the Suicide Mission of ME2 can be just that. It's possible to not have enough squadmates left by the end of it to continue on afterwards. If you have only one, or none at all, there's nobody to help you at the end of ME2, so you die. Again.

Well it all heads down the same path, eventually. The main amazing thing is that you decide how things have fared so far. And it's possible to die in the final mission of both ME2 and ME3, if you do things horribly horribly wrong.

Question, if the time eater allows one to go through time, (not sure on that as i've never played sonic) What's stopping them from going back and stopping unbreakable dark from being released at all?

Well yeah. You have to import your data and everything, of course, but everything you've done in the previous games carries forwards. After all, it wouldn't make sense for you to have to pick between Kaidan and Ashley dying at one point, and then have them both appear anyway, or something.

Story's no different unless you take a different route, but the romance options are entirely different. Male Shep gets Ashley or Liara in 1, Tali, Miranda, or Jack in 2, or Kaidan, Steve or Diana in 3. You can also continue any romance from the previous games in 3, but not start them if you missed them.
Femshep gets Kaidan or Liara in 1, Jacob, Thane or Garrus in 2, or Samantha or Diana in 3. Again, you can continue a romance with any of the others, but not start a new one if you missed it.
