I just skipped a few videos and watched your latest one, so I could see what you're using at the moment, and so here's what I saw from the fight with the nobodies in Twilight Town

Nobody Fight - I'm only doing this because it seems like you had a little bit of trouble. Once the Beserkers came in it seemed like you got hit a lot. Beserkers are one of the enemies that you want to use aerial skills because you can stun them quickly and then take their weapons and hit a lot of enemies at once. You really want to get used to that, because it can take a lot of damage, hurt a lot of enemies, and also, you're going to need to get into the habit of using it, since you'll need it against the fight with Siax. Any chance you get for that reaction command, make sure you take it. But also, make sure you've equiped all of your aerial skills. Because just having Aerial Finisher isn't going to do much. It's a move that increases in damage based on your combos in the air, so you want all aerial skills equiped.
And also, you should make sure your level is that of the world's, if not at least 1 or 2 levels higher. I find that it usually helps.

yeah, that's where the reaction command comes in. I mean, the first time I fought Demyx, I tried to just destroy them, but I ended up losing because of it. They made it that you attack the clones and take a music note clone to destroy the others

I believe GMT is the default since it is where all the other time zones relate.
And Canada spans several times zones, it's not just Eastern Time.
