Xaldin, MPC, Axel, Demyx, Saix, the bosses at Beast's Castle (first time), and Xemnas and though its not a boss fight, the 1000 heartless battle hated the Grim Reaper and Luxord, required me to think >_<++, and the Dragon (when you revisit Land of Dragons) so annoying..totally.
