The seperation between the concepts of body, mind, heart and soul have always confused me a little - simply because if anything, to me, the heart is a part of the soul, rather than the mind being part of it. The mind is a part of the body - the slightly more spiritual part of the physical being. It's connect to the soul, yes, but still appart from it enough to differentiate.
If Nobodies are meant to be body and soul, then it's concievable for there to be a kind of 'phantom heart', if that makes any sense - sort of an existential version of phantom limb syndrome. The mind still thinks it's getting information, but there's no actual source. Demyx is a perfect example of this.

And the reason he looks like that is because Xemnas/Xenahort's Heartless's perception of him altered his form. Right. Hmm. Interesting theory. I dunno... you've got me thinking now. I didn't think Mansex powerful enough to go into all that kind of thing.
Despite my deep and ever-loving fangirlishness for Axel, I picked Demyx. The poor kid should have never been in the Organization, and he stood no chance against a keyblade-wielder.
...I'd also pick Zexion, if I had an extra vote. I don't think he really deserved his death.
For the record, Axel's death was sad, but at least he died well. Self-sacrifice ain't something you go to a bad place for, people. He's the coolest char in the whole series, never mind just CoM and KHII. (And you have no idea how tempted I am to say That Line now, but I shall resist!)
